Monday is our designated family night and every week, we rotate who’s going to make the treat. Claire picked this one–a new twist on a classic–and it was a winner. It had all the crunchy goodness of a rice krispies treat with the yumminess of cookies and cream…yeah, they’re to die for.

Ingredients:
2 cups Oreos (about 18)
6 Tablespoons butter
1 package mini marshmallows (about four cups/ten ounces)
1/2 teaspoon vanilla
1/4 teaspoon salt
4 cups Rice Krispies
1/2 cup white chocolate chips
Spritz 9×9 pan with cooking spray. Coarsely crush sandwich cookies. In a microwave-safe bowl, melt the butter. Then, add the mini marshmallows and heat in thirty seconds, stirring each time until the marshmallows and butter are smooth. Add in the vanilla and salt. In a large bowl, measure out the rice krispies and pour the marshmallows over the top. When thoroughly combined, add in the crushed cookies and white chocolate chips. Stir until combined. Dump into the prepared pan and press down firmly. Cool before slicing. Store leftovers (if there are any) in an airtight container.
