We love a good quick bread at our house. They go well will just about anything from soup to grilled meat and the kids love a slice for breakfast (if we have any leftover!). This one is new to us, and we modified it a bit from the original recipe to give it some more whole grains. Might as well make it a little healthier, right? 😉
Ingredients:

3 cups flour (I used half white flour, half whole wheat flour)
3 teaspoons baking soda
2 teaspoons cinnamon
1/2 cup butter, room temperature
1/2 cup honey
1 1/2 cups sugar
2 large eggs
2 1/2 cups unsweetened applesauce
1/4 cup wheat bran (optional)
2 Tablespoons ground flax (optional)

Preheat oven to 350F. Spray two bread pans with cooking oil. Set aside. In a mixing bowl, whisk together flour, baking soda, and cinnamon, as well as the flax and wheat bran, if using. In a separate bowl, cream together butter, sugar, and honey. Add eggs and beat until just combined, then add in applesauce. Gradually add in flour mixture and beat until just combined. Pour evenly into both pans and bake for 35 to 45 minutes or until a toothpick inserted in the center comes out clean. If removing cakes from the pan, cool for ten minutes on a wire rack before removing. Cool completely before storing. Slice to serve or wrap in plastic wrap and store for up to five days.
