An excellent side dish for cheeseburger wraps! |
Here’s a flavorful side dish that’s quick and easy to whip up. Make it completely vegetarian by omitting the bacon and adding a few tablespoons of olive oil. It’s colorful for entertaining yet simple enough for a regular family dinner in any weather.
Ingredients:
4 strips bacon, chopped
1/2 onion, diced
1 cup red bell pepper, diced
1 cup orange bell pepper, diced
3 cups fresh or frozen corn kernels
Salt and pepper to taste

In a large frying pan, cook bacon until crispy. Drain all but two tablespoons of drippings and add onion. Saute until soft. Add bell peppers and cook about two minutes, stirring frequently. Add corn and cook until heated thoroughly. Season with salt and pepper as needed. Serve hot.
