This recipe creates an incredibly tender chicken in a sweet sauce to be served over rice or noodles. Perhaps the best part is it requires little preparation and practically makes itself because it’s done in a slow cooker. But it can be ready in a few hours so you don’t have to wait all day for a delicious meal. If you’d like to be a bit more prepared however, follow the recipe, place in a freezer safe bag and save for a day when you’re scrambling for a dinner idea.
Ingredients:
4 boneless, skinless chicken breasts or thighs
Salt and pepper
1 cup honey
1/2 cup soy sauce or teriyaki sauce
1/2 cup onion, diced
1/4 cup ketchup
2 Tablespoons oil (vegetable, canola or olive)
2 cloves garlic, minced
4 teaspoons cornstarch dissolved in 3 Tablespoons water
Sesame seeds
Season both sides of the chicken lightly with salt and pepper. Place in bottom of crock pot. In a small bowl, combine all other ingredients except the dissolved cornstarch. Cook on low for 3 to 4 hours or on high 1 1/2 to 2 hours or until chicken is cooked thoroughly. Remove chicken from crock pot and pour in dissolved cornstarch. Stir with sauce and turn to high for about 10 minutes to thicken the sauce slightly. Cut chicken into smaller pieces and return to pot to coat with sauce. Sprinkle with sesame seeds before serving.
