Having eaten a lot of salads lately, I was looking for something new that was still healthy. Voila! This chopped autumn salad has feta, dried cranberries, sliced pears, chopped pecans and crumbled bacon atop a bed of leafy green romaine and that’s it! It sounds healthy just reading about it. Plus, it’s not just good for you, it’s mouthwatering as well.
Here’s What You’ll Need:
6 cups chopped romaine lettuce
1 medium pear, chopped
1/2 cup cranberries
1/2 cup chopped pecans
4 slices bacon, cooked until crisp, cooled and crumbled
2 oz feta cheese, crumbled
For The Dressing:
1/4 cup balsamic vinaigrette
1/2 cup poppy seed salad dressing
(You can play with the ratio of vinaigrette to dressing to get the right tang, sweetness and amount to coat your salad. You can also skip mixing them and drizzle them over the salad separately).
