When the weather begins to change, I start craving foods that are a bit more hearty, probably to get in a few more calories to keep me warm.  This quiche is quite delicious and when served piping hot from the oven, really can heat your insides.

Ingredients:

1 (9 inch) unbaked pie crust
8 slices bacon
1/2 onion, chopped
3 sprigs green onion, chopped
4 eggs
2 Tablespoons milk
2 Tablespoons flour
1 teaspoon dried parsley
1/4 teaspoon dried thyme
Pepper to taste
1/4 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese

Preheat oven to 350F.  Prick holes in bottom of pie crust with fork.  Bake for about 10 minutes until shell is lightly golden.  Cook bacon in skillet until crisp over medium high heat.  Remove and allow to cool.  Crumble bacon and set aside.  Saute onion until soft.

In a large bowl, beat together the eggs, green onion, milk, flour, parsley, thyme, and pepper.

 Add the bacon and onion.  Mix in the mozzarella and cheddar cheese.  Pour mixture into pie crust.

Bake until lightly brown on top and firm in the middle, about thirty to forty minutes.  Serve warm.
