There’s been something on my list of goals for quite some time: making noodles. Since I have a little extra time on my hands, I thought this week, I might as well. I’m so happy I did! Not only are they simple, they’re very filling and go great with just about anything–white sauce, marinara, a little butter and garlic. These will definitely be put on our regular rotation.
Ingredients:

2 cups flour
1/8 teaspoon salt
2 eggs
1/3 cup milk
1 Tablespoon butter, softened
In a stand mixer (or other large bowl), sift together flour and salt. Add eggs, milk, and butter to the flour and mix with the dough hook (or mix with a fork until it reaches a consistency you can knead with your hands). Work the dough for five minutes. Use extra flour as needed to keep dough from sticking. Dough should be smooth and not stick when finished kneading. Cover with plastic wrap and rest twenty minutes. Bring a large pot of salted water to a boil. Roll out dough to about 1/8 to 1/4 inch thickness (they will plump as they are cooking). Cut into small strips and place into boiling water for three minutes. When done, drain, toss lightly with olive oil, and serve with your favorite sauce (or even butter and a sprinkle of garlic).
