 On the weekends, we like to spend a little more time on breakfast. This week, we made some easy fruit danishes using homemade biscuits, fruit pie filling, cream cheese, and almond-flavored glaze. They didn’t take terribly long to make, they can be customized any way you like!

Ingredients:
Biscuits
2 cups flour
1 Tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
6 Tablespoons cold butter, cubed
3/4 cup milk


Sift together the flour, baking powder, sugar, and salt. Cut in the butter until it forms small crumbles. Stir in the milk. Knead into a stiff dough. Roll out about an inch thick and cut with biscuit cutter (we made eight good-sized danishes). Roll out slightly thinner, then press a cup in the center to create a crater for the filling. Place on an ungreased baking sheet.

Filling
1/4 cup sugar
8 ounces cream cheese, softened
2 teaspoons almond extract (or vanilla), divided
Pie filling–cherry, blueberry, strawberry, apple, etc
2 Tablespoons milk
1/4 cup powdered sugar


Preheat oven to 425F. Cream together the sugar, cream cheese, and one teaspoon almond extract. Spread in center of the biscuits. Top with a spoonful of pie filling. Bake for 10 to 14 minutes, or until golden and set. Meanwhile, whisk together the powdered sugar, milk, and remaining almond extract. When danishes are done, drizzle glaze over the top and serve warm.
