One of the girls chose to make these for a family night treat and they were quite the delicious treat and break from our regular go-to chocolate chip cookie. They’re soft and chewy and though there’s no cake mix in them, have a hint of cake batter flavor. They were quickly a family favorite!
Ingredients:
1/2 cup butter, softened to room temperature
3/4 cup sugar
1 large egg, room temperature
1 teaspoon vanilla
1 1/2 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup sprinkles
In a large bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla until just incorporated. In another bowl, sift together the dry ingredients, then add the two bowls together until uniform dough is formed. Mix in most of the sprinkles, reserving a few for topping before baking. Roll into balls and place on a lightly greased cookie sheet, then top with remaining sprinkles. Refrigerate for at least two hours. Preheat oven to 350F and bake cookies for 8 to 10 minutes, making sure not to overbake (they will be pretty soft and pale but will continue baking on the pan after being removed from the oven). Once cooled on the sheet, remove to finish cooling on a baking rack.
