I love a good homemade tortilla but not necessarily the calories that come with it (I cringe when cutting in the shortening).  This recipe is a good substitute.  Plus, it’s for one tortilla so if it’s just a snack or a quick meal, it’s perfect.  To make more, simply multiply the recipe by the number of desired tortillas.

1/4 cup flour
Pinch of salt (optional)
Pinch of sweetener (optional)
1/8 teaspoon baking soda
1 Tablespoon (+/-) water

Combine all ingredients into a soft dough.  Let rest under a damp paper towel for five to ten minutes.  Roll out into a thin tortilla and cook in a pan over medium heat, about thirty seconds each side.
