I love myself a good salad and this one is very versatile, flavorful, and easy to put together. It can be served over a bed of lettuce, with carbs like pita, croissants, or hamburger buns, or can be eat plain. I’ve tried it every way and trust me–it’s yummy.

Ingredients:

1 pound cooked, shredded chicken (if you have leftover rotisserie chicken, this is a great use for it)
1 cup celery, chopped
1/3 cup green onions, chopped
Zest of 1 orange, about 1 Tablespoon
1/2 cup craisins
1/2 cup mayonnaise
1/2 teaspoon dried mustard
2 Tablespoons jellied cranberry sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cups sliced almonds or chopped pecans, toasted (optional)
Croissants, lettuce, or pita bread for serving (optional)

In a medium bowl, combine chicken, celery, green onions, orange zest, and craisins. In another small bowl, combine mayo, mustard, cranberry sauce, salt and pepper. Add to chicken and coat to combine. Refrigerate before serving. To serve, top with toasted nuts (if using) and put on croissant, pita bread, salad, a bun, or alone.
