This stew is super facile and will fill your house with a welcoming aroma all day. The best part is that you chop the veggies, mix the spices and toss it in a crock pot–that’s all! Finally dinner can (practically) make itself!
You’ll Need:
5 medium potatoes, unpeeled, cut into large cubes
1 medium onion, chopped
4 carrots, peeled and chopped
1 to 1 1/2 pounds beef stew meat, cubed
2 cups beef broth
1/2 teaspoon dried oregano
1/4 teaspoon paprika
2 teaspoons parsley
1 Tablespoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
3 Tablespoons cornstarch
3 Tablespoons cold water
Prepare potatoes, onions and carrots and place in crock pot. Add beef on top. In a small bowl, combine broth, oregano, paprika, parsley, Worcestershire sauce, salt and pepper. Pour over meat and vegetables. Cover and cook on LOW eight hours OR if you’re in a rush, high for four hours. Before serving, dissolve cornstarch in cold water and add to the stew. Cover and cook on High ten additional minutes or until thickened, stirring occasionally.
