I discovered this awesome recipe thanks to Pinterest.com–a site where you “pin” ideas from websites onto your boards to keep track of them.  It can be extremely helpful but if you’re not careful, can waste away hours of your time while making you think you were productive.  Trust me.  It’s happened.

Anyway, I we had some guests for dinner last night so I decided I’d try this one out on them (that way if it wasn’t appetizing, I could blame it on the new recipe, haha!  Thankfully, it was rather good).  It’s a tasty way to prepare the meat and is ready about twenty minutes.

Ingredients:

4 Tablespoons butter
2 Tablespoons honey
1 to 1 1/2 pounds pork tenderloin
1/2 teaspoon Cajun seasoning
1/2 teaspoon black pepper
3/4 cup water

Preheat oven to 375F.  In a large skillet, melt butter and honey over medium heat.  Sprinkle pork tenderloin with Cajun seasoning and black pepper.  Brown each side for five minutes.

In a 9×13 pan covered with aluminum foil, move tenderloin from skillet and pour remaining sauce over the top.  Bake for 7 to 10 minutes.

Take out of the oven and remove pork, covering with aluminum foil to keep warm.  Pour excess sauce back into the skillet and add water.  Simmer until sauce is reduced to about a half a cup.  Drizzle sauce over the meat and serve while hot.

***If  you’ve got an ovenproof pot, you can use it to heat food on the stove and in the oven.  And, if you’ve not one for a little Cajun spice, just exclude it and it’s still yummy!***
