This salad is a great combination of salty and sweet and can be served as either a side dish to a meal or as a meal itself with some grilled chicken.

Ingredients:

For salad:
1 apple, cored and thinly sliced
1 mango, cubed
Lettuce, washed, chopped and dried
1/4 cup dried cranberries or raisins
1 strip bacon, cooked and crumbled

For dressing:
1/2 olive oil
1/4 cup balsamic vinegar
1 teaspoon Dijon/Dijonaise mustard
1 teaspoon honey
1 teaspoon garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper


Combine the ingredients for the salad and whisk together the dressing, drizzling over the top just before serving.  Store extra salad and dressing separately in the refrigerator.
