I love this little pizza idea–it’s tidy (the girls didn’t get as messy as they do with traditional pizza), it’s quick and easy and it’s got built in portion control while satisfying a craving for pizza. They’d also make neat little appetizers for a variety of parties.
Ingredients:
3/4 cup flour
3/4 teaspoon baking powder
1 Tablespoon Italian seasoning
Dash of salt
3/4 cup whole milk
1 egg
1 1/2 cup shredded mozzarella
1/4 cup grated Parmesan (optional)
1 cup “toppings”–cubed pepperoni, ham or bacon, black olives, green peppers, etc.
Pizza or marinara sauce
Preheat the oven to 375F. Lightly grease a 12-cup muffin pan or a
24-cup mini muffin pan. In a large bowl, sift together the dry
ingredients.
Fold in the mozzarella and toppings
(you can split the batter as well and add different combinations of
toppings to either batter). Spoon batter into muffin tin and let rest
ten minutes before placing in the oven.
Bake for 15 to 20 minutes or until puffy and golden. Serve hot with warm pizza or marinara sauce for dipping.
