While we’re frantically finishing up home improvements in anticipation of a new baby, school starting and most likely moving at the end of the year, I’m becoming more of a fan of crock pot meals. With little effort after breakfast, we’ve got a delicious meal by dinnertime. Here’s a summertime favorite.

2 to 3 pounds pork (try tenderloin or a roast)
2 Tablespoons olive oil
Steak seasoning
Garlic salt
1 Tablespoon Worcestershire sauce
2 cups barbecue sauce
2 1/2 cups pop (Coke, Pepsi or Dr. Pepper–and FYI, I used a diet, caffeine free version and it worked great)
1/2 cup whole canned cranberries
2 Tablespoons cornstarch dissolved in cold water
Drizzle pork with olive oil. Rub the pork generously with the steak seasoning and garlic salt. Place in the crock pot.
Combine the Worcestershire sauce, barbecue sauce, pop and cranberries. Pour over the top of the pork. Cook on high for about five hours or low about seven to eight hours or until pork is tender and falls apart.
Remove pork to a plate and shred to bitesize pieces. Add the dissolved cornstarch to the remaining sauce to thicken it up.
