Here’s a tasty muffin recipe that can satisfy a craving for donut without any frying or waiting for dough to rise (OR a trip to the local donut shop). Perfect for breakfast or as a slightly sweet dessert.
Ingredients:
1/4 cup butter
1/4 cup oil
1/2 cup sugar
1/3 cup brown sugar
2 eggs
1 1/2 teasppon baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon ground nutmeg
1 teaspoon cinnamon
3/4 teaspoon vanilla
2 2/3 cup flour
1 cup milk
Preheat the oven to 425F. Either lightly spray a muffin tin with cooking spray or line with muffin cups (muffins will release from paper easier if spritzed lightly with cooking spray too). Cream together butter, oil and sugars until smooth. Add in the eggs.
Bake for 15 to 17 minutes, or until the muffins are firm and a toothpick inserted in the center comes out clean (take note: the muffins will not be very “golden” when completely baked). Remove from the muffin pan to cool on a wire rack.
For the glaze:
3 Tablespoons butter, melted
1 cup powdered sugar
3/4 teaspoon vanilla
2 Tablespoons milk
Mix until smooth. Once muffins have cooled slightly, dip the tops in the glaze and sprinkle with course granulated sugar, cinnamon sugar or sprinkles if desired.
