I love a versatile salad, that can compliment a delicious main course or be the star of the meal. This salad is capable of either role. It’s not complicated and is a fairly quick recipe. Hope you like it!
Ingredients:
About 12 oz salad lettuce, chopped
2 oz raw pine nuts
1/2 cup hot water
2 Tablespoons sugar
5 strips bacon
1/2 cup steamed corn
2 sprigs green onion, chopped
Lemon poppy seed dressing
Cook bacon until crisp. Remove to a paper towel to drain and when cool enough to handle, crumble over salad greens. Sprinkle corn and green onions over lettuce.
Combine hot water and sugar. Pour over pine nuts in a frying pan over medium-high heat. Bring to a boil, stirring frequently. Cook until sugar water is reduced and it begins to caramelize around the pine nuts. Remove from heat and allow to cool enough to handle. Break apart over the top of the salad. Drizzle with lemon poppy seed dressing and serve.

Hi Racheal! I love salads that are filling. This one looks delicious! In summer, I usually cook and bake less and the kids often get a hearty salad for dinner.
