Lately I’ve become enamored with my waffle iron. There’s so much more than simply waffles to make, like hash browns while you’re busy fixing the rest of breakfast. Now, here’s a yummy brownie recipe that takes only minutes and is incredible versatile: serve with fruit, drizzle with caramel, top with whip cream, a scoop of ice cream or a dash of powdered sugar. Ingredients:
1/2 cup butter
1/4 cup cocoa
3/4 cup sugar
2 eggs
1 Tablespoon water
1 1/4 cup flour
1/4 teaspoon salt
In a large saucepan, melt the butter. Blend in cocoa. Add sugar, eggs and water. Mix in flour and salt until dough is thick and sticky.
Heat waffle iron. Spray with cooking spray if not non-stick. Place a heaping spoonful on each square and close for about five minutes or until brownies are cooked through. Serve hot.
