I served these banana muffins with dinner and they were a big hit. The cocoa adds just enough hint of chocolate and the white chocolate chips are a perfect little surprise. They aren’t as sweet as cookies either but could easily be served as a treat for dessert.

Ingredients:
1/2 cup butter, softened
3/4 cup brown sugar
1 teaspoon vanilla
2 eggs
3 very ripe bananas
2 cups flour
1/4 cup + 2 Tablespoons cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup white chocolate chips, 1/4 reserved
Preheat oven to 350F. Line muffin tin with paper cups and spritz with cooking spray. In a large bowl, cream together butter and sugar. Add in eggs, bananas and vanilla, beating until well combined.
Spoon the batter evenly into each muffin tin. Top with remaining 1/4 cup of white chocolate chips, pressing them gently into the batter. Bake for 20 to 25 minutes, or until tops are firm (a toothpick inserted into the center will not necessarily come out clean due to the banana–be careful not to over bake).
