Sorry if this is ruining anyone’s new years resolution but these are just too good to keep to myself. We served them at our farewell party and they were a hit!
Ingredients:
Crust
1 cup graham cracker crumbs
1/4 cup pecans, finely chopped
1/3 cup butter, melted
Filling
2 packages cream cheese, softened
1/2 cup sugar
1/4 cup sour cream
2 eggs, lightly beaten
1/2 teaspoon vanilla
Chocolate Coating
24 ounces semisweet chocolate
3 Tablespoons shortening
Line a 9×9 inch baking pan with foil and spritz with cooking spray. Combine the graham crackers, pecans and melted butter. Press into pan and set aside.
Beat together the cream cheese, sugar and sour cream till smooth. Add eggs and vanilla. Pour over crust. Bake at 325F for 35 to 40 minutes or until center is almost set. Cool and freeze overnight.
Melt chocolate and shortening, stirring until smooth. Pull cheesecake out from pan and cut into bite-sized squares. For easiest handling, keep cheesecake frozen until ready to dip into chocolate. Dip in chocolate with toothpick and place on wax paper to cool. Place in freezer if in a hurry.
