I come up with far too many excuses to have cookies. It’s Sunday afternoon and Jack goes back to work tomorrow. It’s Family Night. It’s the middle of the week. It’s Friday. It’s Saturday. I don’t feel well. I just want one. Once I saw this recipe, I knew I was doomed. It makes one mega cookie that can be sliced up and shared, but you don’t have to.
Ingredients:
2 Tablespoons butter, softened
2 Tablespoons sugar
3 Tablespoons brown sugar
2 Tablespoons egg (break it open, scramble it and use 2 Tablespoons)
1/2 teaspoon vanilla
1/4 cup flour
2 Tablespoons cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
A total of 1/4 cup: semi-sweet OR dark chocolate, milk chocolate and white chocolate chips (reserve 1 Tablespoon)

Preheat oven to 350F. Use parchment paper or spritz cookie sheet with cooking spray. Cream together butter and sugars. Mix in the egg and vanilla. Sift together dry ingredients in a separate bowl. Combine well with the wet ingredients. Carefully fold in the chocolate chips. Spoon onto cookie sheet and shape into a tall mound. Press remaining chocolate chips on top. Bake 14 to 16 minutes (the cookie will still be fairly soft even when finished). Cool completely and serve with a tall glass of milk.
