I knew Jack was going to be busy over the dinner hour so instead of trying to start up a fire to grill drumsticks, I used this yummy crock pot recipe and the main course was ready for us when we walked in the door from church. Feel free to add some spice via Tabasco or cayenne pepper but I opted to keep ours mild for the sake of our kids and my own tongue.
Ingredients:
1/2 cup honey
1/2 cup brown sugar
1/3 cup balsamic vinegar
1/3 cup soy sauce or Teriyaki sauce
1 Tablespoon mince garlic
2 teaspoons ground ginger
2 teaspoons pepper
10 drumsticks, with or without skin
Parsley for garnish (optional)
Bring everything except for drumsticks and parsley to a boil. Reduce heat and simmer about five minutes or until sauce thickens. Place drumsticks in crock pot and pour sauce over. Cook on low six hours or on high three to four, turning chicken occasionally to coat in sauce. Sprinkle with parsley if desired and serve hot.
