In honor of barbecue and picnic season (which has to show up sometime, RIGHT?!), here’s a delicious, classic coleslaw recipe, as in no nuts, raisins, apples or any other surprises. And just FYI, this is a huge recipe so unless you’re going to be sharing with a large group (or if you really like coleslaw), cut the recipe in half.
Ingredients:
1 medium green cabbage, cored and thinly sliced
2 medium carrots, peeled and grated
1 small onion, thinly sliced
1 cup mayonnaise
1/4 cup sugar
1/4 cup apple cider vinegar
1/4 cup parsley
1 teaspoon dry mustard
Salt and pepper to taste
Toss together cabbage, carrots and onion. In a separate bowl, thoroughly mix together remaining ingredients except for salt and pepper. Stir dressing into vegetables and season to taste with salt and pepper. Refrigerate four hours or overnight for optimum taste.
