Let’s not limit green, minty cookies to St. Patrick’s Day alone!
White and Dark Mint Chocolate Chip Cookies
Ingredients:
3/4 cup butter, softened
1 1/4 cup sugar
2 eggs
1 teaspoon vanilla
2 3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
12 drops green food coloring
2 teaspoon mint extract
1 cup semisweet chocolate chips
1 cup white chocolate chips
Preheat oven to 350F. Cream together butter and sugar. Add eggs and vanilla. In a separate bowl, combine flour, baking powder and salt. Add to butter mixture. Drop in food coloring and mint extract, stirring until evenly colored. Stir in chocolate chips. Drop on greased cookie sheet by tablespoonfuls and bake 8 to 10 minutes or until set (they shouldn’t be very browned). Cool and eat!
