My sister Jenny gave me a compiled recipe book for Christmas and I’ve already marked a few that look delicious. The first we tried was the cinnamon crumb cake–a simpler version of a quick (yet delectable) coffee cake. It was so good, we had it twice as a side to our soup dinners in a week. And maybe a slice for breakfast too…
Ingredients:
1 1/2 cup sifted flour plus 1/4 cup
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup cooking oil
1/2 teaspoon sugar
1 egg
2 Tablespoons butter
1/3 cup brown sugar
1 teaspoon plus 1/2 teaspoon cinnamon
Preheat oven to 375F. Sift together flour, baking powder, salt and 1 teaspoon of cinnamon. Beat wet ingredients together until well blended. Combine with the dry ingredients and stir until moistened. Pour into a greased 9×9 pan. Combine butter, brown sugar and 1/2 teaspoon cinnamon, mixing with a pastry cutter until small crumbs. Sprinkle over the batter. Bake for 20 to 25 minutes. Serve hot or cooled.
