We were getting ready for a Friday night movie night at home (we just discovered VidAngel, a site that allows users to filter content to avoid scenes and language they’d rather not see–check it out here!) and I decided that cookies were in order. Not just any cookies, but big, soft, chewy chocolate chip cookies that are perfect for dunking in milk. Introducing the super soft chocolate chip cookie!
Ingredients:
1/2 cup butter
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
Preheat oven to 350F. Microwave butter for about 25 seconds or until butter is mostly melted but not hot. Cream together with the sugars, then add vanilla and egg. Sift together dry ingredients and add to the butter mixture. When the dough becomes crumbly, work together with hands. Incorporate chocolate chips. Roll into 9 to 15 large balls and place on ungreased cookie sheet. Bake for 9 to 11 minutes (don’t overbake!) and once they’re puffy and pale, remove from the oven and let rest on pan for half an hour. Remove and eat!
