Easily one of my favorite side dishes is coleslaw. I don’t know what it is about it–the crunchy veggies, the slightly sweet, tangy sauce to balance out some delicious pulled pork or marinated grilled chicken and homemade baked beans or what–but I like it. Here’s a SUPER easy recipe that goes together quickly and marinates in the fridge overnight and is ready for dinner the next day (or in as few as a couple of hours in a pinch), so all you have to do is pull it out and enjoy!

Ingredients:


1 cup mayonnaise
1 Tablespoon white vinegar
1/4 cup granulated sugar
1/4 teaspoon dry mustard
1/4 teaspoon salt
14 ounces of shredded cabbage and carrots (you can use coleslaw mix if you’re in a hurry)


In a large bowl, whisk together all the ingredients except for cabbage and carrots, until smooth. Add cabbage and carrots and fold over until completely covered. Cover and refrigerate at minimum two hours, but best if overnight. Serve chilled.
