In 2019, I had a goal of making at least one new dish a month…and failed pretty horribly. It’s not that I’m not adventurous, but I have to balance finding something nutritious, that the kids will like, that Jack will like, all while making sure I have all the ingredients on hand. I’ve renewed my 2020 commitment to expanding our dinner repertoire and this sausage and potato soup was the first on the menu. The kids resisted. Then they tried it. Then they came back for second (and third!) helpings. With a side of bread and butter, a salad, and some sliced fruit, it was an exceptionally easy, filling, nutritious dinner. Oh, and bonus: it takes about five minutes to assemble and is cooked in the crock pot. WIN.
Ingredients:
1 pound Italian sausage
4 large potatoes, peeled and diced
4 cups chicken broth
1 Tablespoon minced garlic
1/2 onion chopped
1 teaspoon salt
1 teaspoon pepper
1 cup sour cream OR whipping cream
Green onions, minced parsley, and/or shredded parmesan cheese for garnishes
In a frying pan, brown the ground sausage and drain fat. Place in the slow cooker and put in garlic, onion, potatoes, salt, pepper, and broth. Stir to combine. Cook on low 5 to 6 hours (or until potatoes are tender). Stir in sour cream. Serve hot with garnishes.
