Sunday night dinners are either super simple or over-the-top elaborate. Just depends on my mood. ๐ Today, we went with simple. That doesn’t mean we sacrificed flavor. This meal was super delicious, inexpensive, uncomplicated, and will definitely be on our regular rotation.
Ingredients:
8 ounce box of pasta
1 pound Italian Sausage
1 small onion, diced
1 Tablespoons garlic powder
1 can tomato sauce
1 teaspoon Italian seasoning
Salt and pepper to taste
1 can petite diced tomatoes OR 4 medium Roma tomatoes, diced
8 ounces cream cheese
1 cup chicken broth
1 cup milk
1/4 cup Parmesan cheese
In a large pot with a lid, heat a small amount of olive oil and cook the onions until slightly soft. Add the sausage and break it up into crumbles, stirring until it’s no longer pink. Add pasta, tomato sauce, diced tomatoes, garlic, salt, pepper, Italian seasoning, cream cheese, and chicken broth. Stir to combine and cover with the lid. Bring to a simmer and keep covered, stirring occasionally until pasta is soft, about 6 to 10 minutes. Stir in milk and cheese. Serve hot and top with fresh parsley or shredded Parmesan cheese.
