I am always on the lookout for new foods to try for breakfast, especially if it’s easy, quick, and healthy. Cooking isn’t always high on my list of fun things to do, so rolling out of bed and having to cook right away doesn’t always make me a happy camper. Introducing muesli. It’s like a primitive granola, with very little prep beforehand. Plus, it can be eaten in a variety of ways, from soaking in milk, vanilla, and sweetener with yogurt, or “swill” style, with a cored and shredded apple. Aside from how healthy and filling it is, I love how customizable (and easy!) it is.
Ingredients:
- 3 1/2 cups old-fashioned rolled oats
- 1/2 cup wheat germ
- 1/4 cup pumpkin seeds raw, unsalted
- 1/4 cup almonds, chopped raw, unsalted
- 1/2 cup pecans raw, unsalted
- 1/8 cup chia seeds
- 1/4 cup dried dates chopped
- 1/2 cup dried blueberries
Mix all ingredients in a large bowl. Store in an airtight container. At least an hour before consuming, mix with your favorite milk or yogurt, sweetener, and vanilla. Add fresh fruit if desired.
