If I had to choose one food to eat for the rest of my life, it would be popcorn. Is it the crunchiness? The versatility? The utter delectablility of the whole experience? I don’t know. All that I do know is that I have never met a popcorn I wouldn’t try. So, when Kate brought home a bag of Strawberry & White Chocolate popcorn gifted to her from her teacher, we decided to recreate it en masse so the whole family could enjoy the delicately sweet, salty, crunchy treat. It was well-received, as all of my children have inherited my love of popcorn, too.
Ingredients:
Eight cups of popcorn (here’s what we use for stovetop popcorn, which will forever beat out microwave popcorn)
Salt to taste
3 Tablespoons freeze-dried strawberry powder
12 ounces vanilla almond bark
Prepare the popcorn according to package or recipe instructions. Salt to taste, if needed, and remove any unpopped seeds. Spread on a single baking sheet. In a microwave safe bowl, melt the almond bark in thirty-second intervals until smooth. Add the powdered strawberries, and stir to combine. Drizzle over the popcorn, toss lightly, and allow it to cool until solid. Break up the larger pieces before serving.
Enjoy!
