We *love* this recipe so much. It’s a great substitute for store-bought granola bars, which seem like more air than actual ingredients. I make a double batch a couple times a week, and they barely last a few days before the kids gobble them up in their school lunches or as a snack. I may or may not also contribute to their disappearance.
Ingredients:
1 cup very smooth creamy peanut butter
⅔ cup honey
1 teaspoon vanilla extract
½ teaspoon sea salt
2½ cups whole rolled oats
⅓ cup mini chocolate chips
3 tablespoons pepitas, or crushed peanuts or cashews
Line an 8×8 baking pan with parchment paper. In a large bowl, stir together the peanut butter, honey, vanilla, and salt, until smooth. Add the oats, chocolate chips and the pepitas (or other nuts). Can add ground flax and/or wheat bran to up the fiber content. Mix together, continuing even if it seems crumbly. When combined, press firmly into the pan. Use a second piece of parchment paper and the back of a measuring cup to help flatten the granola bars. Chill for at least one hour, then slice into bars. Store in the fridge.
